Without any previous knowledge or appreciation for what is essentially a mix of art and science, I started roasting coffee in the July of 2023.

Firstly, I learnt from my mistakes. Secondly, I have an national champion roaster as a mentor. Thirdly I’m applying my scientific and sales and marketing background to plot a journey towards optimum, brew-flexible roast profiles that customers get very grumpy about if I ever run out or am not about!

With a meticulous approach to the pre-roast set-up of the oven and monitoring of each and every roast, I’m able to reproduce flavour profiles that are consistently delicious batch after batch.

I roast and develop any coffee, in principle, either side of ‘medium’. Never too light, under-developed and a bit too sharp and sour. Never too dark, over-developed and a bit too bitter and less nuanced for mine and my customers liking.

I roast as hot and fast as I dare in small 6 or 9Kg batches on a 12Kg Probat LPG, drum roaster.

In a nutshell, each of my coffees has it’s own special roast profile designed to bring out it’s unique sweetness and flavour, whether it’s brewed manually or as espresso.
